Thomas Keller, the famed Chef of The French Laundry and Per Se, partnered with Shaoching Bishop, former CEO of Sterling Caviar and Tsar Nicoulai Caviar, to form Regiis Ova (“Royal Egg” in Latin), a new caviar company. The duo also opened a pop-up high-end lounge in Yountville, CA centering on the brand’s most prized varieties as well as champagne, as to be honest what goes better together than caviar and champagne.

The whimsical menu at Regiis Ova Caviar & Champagne Lounge centers around caviar of course and presents a selection of offerings to be enjoyed with pre-or post-dinner drinks. Guests will be able to order caviar and roe by the gram or tin and those that want a little selection of all should opt for the Tasting of Regiis Ova Caviar ($95). Alongside caviar and snacks which are best to be shared, menu highlights include Daniel Boulud Smoked Salmon and Iwate Prefecture A5 Wagyu Carpaccio.

To pair with Keller’s menu, Beverage Director for Per Se and The Surf Club Restaurant Michel Couvreux and Andrew Adelson, Head Sommelier at The French Laundry, offer a selection of champagne  (from Dom Pérignon, Krug, Ruinart, and more), sparkling wine, white wine and red wine by the glass or bottle.

The lounge is open Thursday – Saturday: 5:00 pm – 11:00 pm and Sunday: 3:00 pm – 7:00 pm and invites guests for the ultimate celebration of champagne, caviar, and classic dishes from Chef Keller. Surrounded by a curated assortment of RH furnishings, hand-selected by noted designer Ken Fulk, space presents a welcoming and luxurious space in which for all senses to be heightened. Whether sitting in a lush garden setting or in elegant lounge spaces, guests will also be able to enjoy a roster of Bay Area musicians performing nightly.
